If you've eaten Greek cakes in Sydney in the past 20 years, chances are it was Fanos Papacharalambous who made them.
The burly, cheerful baker has cooked in Surry Hills, Ashfield and Earlwood and now he has Greek Cakes by Eleni, a tiny shop in Maroubra, its shelves groaning with all the sticky, nutty, filo-wrapped delicacies of the Hellenic repertoire.
The shop is dubbed "by Eleni" because Fanos says his wife is the power behind the pastry. "You have to understand something about our unique relationship," says Eleni. "It consists of Fanos's expertise in making cakes - and mine in selling them."
Theirs is a partnership built on love and all things sweet.
